Roasted Strawberries:

  • 2 lbs fresh strawberries
  • 2 Tbsp balsamic vinegar
  • 2 tsp honey

Whipped Feta:

  • Approx. 8 oz feta cheese (around 220 grams)
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp olive oil (plus more for drizzling/serving)
  • Black pepper, to taste

Serve With:

  • Crusty bread (like sourdough or baguette)
  • Fresh basil, chopped

Instructions

  1. Preheat and prepare strawberries: Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper. Wash strawberries, remove the stems, and slice each berry in half or quarters depending on size. Spread the strawberries in a single layer on the prepared baking sheet.
  2. Mix and roast strawberries: Whisk together balsamic vinegar and honey, then drizzle over the strawberries. Toss gently to coat evenly. Arrange strawberries in an even layer and roast in the oven for 30-35 minutes until they soften and release their juices.
  3. Make whipped feta: While strawberries roast, combine feta cheese, Greek yogurt, olive oil, and black pepper in a food processor. Blend for several minutes until smooth and creamy, scraping down the sides as needed. Transfer the whipped feta to the fridge to chill for 30-60 minutes.
  4. Cool and chill strawberries: Once roasted, remove strawberries from the oven and allow to cool 5-10 minutes. Transfer them along with their juices to a container and refrigerate separately from the whipped feta.
  5. Serve: When ready to serve, transfer the whipped feta to a large serving bowl and spoon the roasted strawberries on top. Serve with toasted crusty bread for dipping. Garnish with freshly chopped basil, an extra drizzle of olive oil, and a sprinkle of black pepper.

Notes

  • Make the whipped feta and roasted strawberries a few hours to one day in advance for best flavor and convenience. Keep them chilled and separate until serving.
  • To serve as crostini, slice and toast baguette, spread whipped feta on each slice, add roasted strawberries, then garnish with basil, black pepper, and olive oil.
  • Safe to store leftovers in airtight containers in the fridge for a few days, preferably keeping feta and strawberries separate.
  • You can also serve whipped feta with roasted cherry tomatoes or pita bread for variety.
