  • 1/2 cup ice cubes
  • 3/4 cup pineapple juice
  • 3/4 cup coconut milk
  • 12 tbsp brown sugar (optional)

Garnish

  • Pineapple wedge
  • Strawberry

Instructions

  1. Prepare the strawberry base: Blend fresh strawberries with 1/4 cup of pineapple juice until the mixture is smooth and creamy. Pour this into a separate jug and set aside.
  2. Create the coconut pineapple drink: Rinse the blender to avoid mixing flavors, then add fresh pineapple chunks, ice cubes, pineapple juice, coconut milk, and optional brown sugar. Blend until the mixture is smooth and velvety.
  3. Assemble the drink: Pour the strawberry base into a tall glass until it fills about 25% of the glass. Gently top with the coconut and pineapple blend to fill the rest of the glass. Use a straw or skewer to lightly swirl the layers if the gradient effect isn’t distinct.
  4. Garnish and serve: Decorate the drink with a fresh pineapple wedge and a whole strawberry on the rim. Serve immediately and enjoy this refreshing tropical mocktail.
