Instructions
- Prepare the Sauce: In a bowl, combine vegetable broth, soy sauce, brown sugar, and sesame oil. Whisk thoroughly until the brown sugar dissolves and the sauce is well blended. Set aside.
- Cook Carrots: Heat a skillet over medium-high heat with 1 tablespoon oil. Add julienned carrots and sauté until they become golden brown and slightly tender. Remove from skillet and set aside.
- Cook Onions: In the same skillet, add onions and fry until caramelized and softened. Remove and set aside with the carrots.
- Cook Broccoli: Next, add broccoli florets to the skillet. Stir-fry until bright green and just tender. Remove and set aside with other vegetables.
- Cook Bell Peppers: Finally, add sliced red bell pepper to the skillet and sauté until they start to soften but retain some crunch. Remove and set aside with remaining vegetables.
- Combine Vegetables and Garlic: Return all cooked vegetables to the skillet. Press and finely mince or crush garlic cloves and add them to the skillet. Toss everything together to meld flavors and allow the garlic to soften.
- Add Noodles and Sauce: Add the cooked lo mein noodles to the skillet along with the prepared sauce. Toss well to coat noodles and vegetables evenly. Allow the mixture to cook together for 3-5 minutes so flavors combine and noodles heat through.
- Serve: Remove from heat and serve the veggie lo mein immediately for best texture and flavor.
