Instructions
- Prepare the dough: In a bowl, combine the cold vegan butter, spelt flour, and a pinch of salt. Gradually add ice-cold water while mixing until a smooth dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
- Caramelize the onions: Slice the onions into rings and gently cook them over low heat in olive oil for about 15 minutes until golden and soft, stirring occasionally to prevent burning.
- Slice the potatoes: While the onions are caramelizing, thinly slice the potatoes evenly to ensure they cook properly in the galette.
