  • 1/4 tsp salt

Wet Ingredients:

  • 1/3 cup cashew butter (or almond butter or sunbutter)
  • 3 tbsp honey (or maple syrup, if vegan)
  • 1 tbsp lemon juice
  • Zest of 2 lemons
  • 1/2 tsp vanilla
  • 1 egg (or flax egg, if vegan)

Instructions

    1. Preheat your oven to 375°F and line a baking pan with parchment paper.

In a large mixing bowl, combine the dry ingredients: oats, oat flour, walnuts, chia seeds, baking soda, and salt.

  1. In a small mixing bowl, whisk together the wet ingredients: cashew butter, honey, lemon juice, lemon zest, vanilla, and egg.
  2. Pour the wet ingredients into the dry ingredients and mix until well combined.
