Bread Batter

- 1 cup (200g) granulated sugar
- 3 teaspoons baking powder

- 1 1/4 cup (315g) dairy-free milk
- 1/2 cup (125g) neutral flavored oil
- 1 tablespoon apple cider vinegar (optional)
- 1 teaspoon vanilla extract (optional)
Cinnamon Swirl
- 1/3 cup (65g) packed brown sugar
- 1 tablespoon ground cinnamon
Streusel Topping (optional)
- 3 tablespoons (25g) all-purpose plain flour
- 2 tablespoons (20g) packed brown sugar (or sugar of choice)
- 1 tablespoon (15g) vegan butter, margarine or coconut oil (melted and cooled)
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven: Preheat your oven to 180°C (355°F). Line an 8-inch (20 cm) loaf pan with parchment paper to prevent sticking and ensure easy removal after baking.
- Prepare the bread batter: In a large mixing bowl, whisk together all the dry ingredients: flour, granulated sugar, baking powder, and a pinch of salt until no lumps remain. Add the wet ingredients: dairy-free milk, neutral oil, apple cider vinegar (if using), and vanilla extract (if using). Whisk them together until the batter is smooth and set aside.
- Make the cinnamon swirl: In a small bowl, combine the brown sugar and ground cinnamon until well mixed. This mixture will provide the sweet cinnamon layers within the bread.
- Prepare the streusel topping (optional): In another small bowl, mix the flour, brown sugar, melted vegan butter, and ground cinnamon until the mixture resembles fine crumbs. This topping will add a delightful crunchy texture to the loaf.
- Assemble the bread: Pour about one-third of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly on top. Pour another one-third of the batter over this layer, then sprinkle the remaining cinnamon sugar. Pour the last third of the batter to cover all the cinnamon sugar layers.
- Add streusel topping: Evenly sprinkle the streusel mixture over the top of the loaf batter before baking. This step is optional but adds a nice texture and sweetness.
- Bake the bread: Bake the loaf in the preheated oven for approximately 1 hour. If the top starts browning too quickly, tent the pan loosely with aluminum foil to prevent burning. Test doneness by inserting a toothpick into the center; it should come out clean or with just a few moist crumbs.
- Cool the bread: Allow the cinnamon bread to cool in the loaf pan for 10 minutes to set. Then remove it from the pan and transfer to a wire rack to cool completely. This prevents a soggy bottom and enhances texture.
- Serve and store: Slice and serve the bread plain, with vegan butter, or toasted. Store at room temperature in an airtight container for up to one day, in the refrigerator for up to three days, or freeze for up to one month for longer preservation.
