  • Yield: 6 servings 1x

Description

Tuscan Soup Delight is a warm and comforting soup inspired by Olive Garden, featuring savory Italian sausage, tender potatoes, fresh kale, and a creamy broth infused with Italian seasonings. This hearty dish is perfect for cozy meals and easy to prepare, offering a flavorful taste of Tuscany right at home.

Ingredients

Scale

For the Soup

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 medium potatoes (diced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup kale (chopped, or spinach as an alternative)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

For Garnish

  • Grated Parmesan cheese
  • Fresh parsley (chopped)

Instructions

  1. Cook the Sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.
  2. Sauté the Vegetables: Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent and fragrant. Then add the diced potatoes and stir to combine.
  3. Add Broth and Seasoning: Pour the chicken broth into the pot and bring it to a boil. Stir in the Italian seasoning, salt, pepper, and red pepper flakes if using. Reduce the heat and let the soup simmer for about 15 minutes or until the potatoes are tender.
  4. Add Cream and Greens: Once the potatoes are tender, stir in the heavy cream and return the soup to a gentle simmer. Add the chopped kale or spinach and cook for an additional 2-3 minutes until the greens are wilted.
  5. Serve: Taste the soup and adjust the seasoning with more salt and pepper if needed. Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.

Notes

  • You can substitute spinach for kale if preferred.
  • Adjust red pepper flakes to control the level of heat.
  • Use half-and-half or non-dairy cream for a lighter soup.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze soup without cream; add cream upon reheating to prevent separation.
  • Pairs well with crusty bread, fresh salad, or Italian antipasto.
