Description
A classic recipe for delicious Tiramisu, a popular Italian dessert made with layers of coffee-soaked ladyfingers and a creamy mascarpone mixture, topped with cocoa powder.

For the Mascarpone Mixture:
- 6 large egg yolks
- 2/3 cup (135 grams) granulated sugar
- 1/4 teaspoon salt
- 24 ounces (680 grams) cold mascarpone cheese (straight from the refrigerator)
- 2 teaspoons (10 ml) pure vanilla extract
- 1 1/2 cups (360 ml) cold heavy whipping cream
For Assembling the Tiramisu:
- 2 cups (480 ml) cold espresso
- 1/4 cup (60 ml) Kahlua (optional)
- 40 to 45 ladyfingers
- 1/4 cup (22 grams) unsweetened cocoa powder
Instructions
- Combine the egg yolks, granulated sugar, and salt in a large heat-proof bowl.
- Once thickened, pale, and reaches 165°F-170°F, remove from heat and let cool.
- Whisk in mascarpone and vanilla extract until smooth, avoiding lumps.
- In a separate bowl, beat heavy cream to medium-stiff peaks.
- Fold whipped cream into mascarpone mixture, then set aside.
- Combine espresso and Kahlua in a shallow dish.
- Dip ladyfingers in coffee mixture and layer in a baking pan.
- Spread half of mascarpone mixture over ladyfingers, then repeat layers.
- Top with remaining mascarpone mixture and cocoa powder.
- Refrigerate for at least 8 hours before serving.
Set the bowl over a saucepan of simmering water, whisking constantly to ensure that the eggs don’t scramble.
Notes
- This dessert tastes even better the next day as the flavors meld together.
- For a non-alcoholic version, simply omit the Kahlua.
