For the Marinade:
- 8 chicken thighs (about 2 lb total)
- 6 oz pineapple juice (can)
- 1 1/2 tablespoon fresh ginger (finely chopped)
- 1 1/2 tablespoon soy sauce
- 3–5 garlic cloves (finely chopped)
- 2 tablespoon sesame oil
- 1 tablespoon light brown sugar
- 1 teaspoon Kosher salt + black pepper (to taste)
For Garnish:
- Green onion (sliced)
Instructions
- Prepare the Marinade: In a mixing bowl, combine pineapple juice, fresh ginger, soy sauce, garlic cloves, sesame oil, light brown sugar, Kosher salt, and black pepper. Mix well and reserve 1/2 cup for sauce. Add chicken thighs, cover, and marinate overnight or for at least 6 hours.
- Bake the Chicken: Preheat the oven to 400F. Place chicken thighs skin side down on a baking dish or cast iron skillet. Bake for 20 minutes. Flip the thighs, pour half of the reserved sauce over them, and bake for an additional 15 minutes or until cooked through. Broil on high for 5 minutes.
- Garnish and Serve: Garnish with sliced green onions. Serve and enjoy!
