Instructions

  1. Cook the Chicken: Season the chicken pieces with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
  3. Cook the Orzo: Pour in the chicken broth and bring to a simmer. Add the orzo and Italian seasoning, stirring to combine. Reduce heat to medium-low, cover the skillet, and cook for 10-12 minutes until the orzo is tender and most of the liquid has been absorbed, stirring occasionally.
  4. Finish the Dish: Return the cooked chicken to the skillet and stir to combine. Stir in the heavy cream and grated Parmesan cheese until well mixed and creamy. Cook for an additional 2-3 minutes until heated through.
