Description

These Sriracha glazed roast potatoes are a spicy twist on a classic side dish. Crispy on the outside and fluffy on the inside, these potatoes are packed with flavor and make the perfect accompaniment to any meal.

Potatoes:

  • 800g / 28.2oz white potatoes
  • salt
  • vegetable oil

Garnish:

  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp maple syrup
  • 1.5 tbsp sriracha
  • 3 garlic cloves, peeled + finely chopped
  • 1 tsp sesame oil
  • small handful of sesame seeds
  • small handful of fresh coriander, chopped

Instructions

  1. Prepare Potatoes: Peel and slice the potatoes, then boil until soft.
  2. Roast Potatoes: Toss the potatoes in oil, roast until crispy.
  3. Make Glaze: Mix soy sauce, maple syrup, sriracha, garlic, and sesame oil in a pan.
  4. Glaze Potatoes: Coat the roasted potatoes in the sriracha glaze.
  5. Serve: Sprinkle with sesame seeds and coriander before serving.

Notes

  • You can adjust the spiciness by adding more or less sriracha to the glaze.
  • Make sure to keep an eye on the potatoes while roasting to prevent burning.
