Description

Pie Crust:

  • 1 9-inch frozen pie crust

Filling:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 8 ounces baby Bella mushrooms, sliced
  • 5 ounces fresh spinach, roughly chopped
  • 1 ½ cups shredded Gruyère cheese, divided
  • ¼ cup fresh sweet peas (optional)
  • 4 large eggs, room temperature
  • 1 ¼ cups heavy whipping cream or light cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (smoked paprika can be used)
  • ⅛ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare crust: Line a 9-inch pie pan with the pie crust. Set aside.
  3. Sauté onions and garlic: Heat olive oil in a skillet and cook onion and garlic for 1-2 minutes.
  4. Cook mushrooms: Add mushrooms and cook for 5 minutes, stirring occasionally.
  5. Add spinach: Add fresh spinach and let it wilt. Cover the pan with a lid for about a minute. Stir until spinach has wilted, then remove from heat.
  6. Fill the crust: Add the spinach filling to the pie crust, sprinkle with 1 cup of shredded cheese. Add sweet peas if desired.
  7. Prepare egg mixture: In a medium bowl, whisk together eggs, cream, salt, pepper, paprika, and red pepper flakes until well combined.
  8. Pour mixture: Pour the egg mixture over the filling, top with remaining cheese.
  9. Bake: Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown and set.
  10. Rest and serve: Let the quiche sit for at least 10 minutes before serving.
