Perfect for sushi lovers looking for an easy-to-make, crowd-pleasing dish at home.

Ingredients

Scale

Rice Mixture

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Spicy Salmon Mixture

  • 1 pound salmon fillet, skinless
  • 2 tablespoons mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 teaspoon sesame oil

Toppings & Garnishes

  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • 1 sheet nori, cut into strips
  • Soy sauce, for serving

Instructions

  1. Preheat oven: Set your oven to 375°F (190°C) to prepare for baking the salmon and sushi bake layers.
  2. Cook sushi rice: Rinse the sushi rice under cold water until water runs clear, then combine with 2 1/2 cups water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, reduce heat to low, cover, and simmer for 20 minutes until rice is tender.
  3. Prepare vinegar mixture: In a small bowl, stir together rice vinegar, sugar, and salt until dissolved. Fold this mixture gently into the cooked rice and let it cool slightly to achieve the classic sushi rice flavor.
  4. Bake salmon: Place the skinless salmon fillet in a baking dish and bake in the preheated oven for 15-20 minutes until fully cooked and flaky. Remove from oven and let cool slightly.
  5. Mix spicy salmon topping: Flake the baked salmon with a fork then combine with mayonnaise, sriracha sauce, and sesame oil in a bowl. Mix thoroughly to create a creamy, spicy salmon layer.
  6. Assemble sushi bake: Spread the seasoned sushi rice evenly in a large baking dish. Spoon the spicy salmon mixture evenly over the rice layer.
  7. Bake assembled sushi: Return the baking dish to the oven and bake for 10-15 minutes until heated through and the top is slightly crispy.
  8. Add final toppings and serve: Remove from oven and garnish with sliced avocado and chopped green onions. Serve with nori strips and soy sauce on the side for added texture and flavor.

Notes

  • Use fresh, sushi-grade salmon for the best flavor and safety.
  • Adjust the sriracha amount to control the spice level according to your preference.
  • You can substitute mayonnaise with vegan mayo to make this dish vegan-friendly.
  • Keep the cooked rice covered with a damp towel if letting it cool to prevent drying out.
  • Serve immediately for best texture, but leftovers can be refrigerated and reheated gently.
