This Spicy Chili Garlic Oil Noodles recipe is a flavorful and comforting dish perfect for those who love a spicy kick combined with the richness of garlic and parmesan. It features knife-cut noodles tossed in a sizzling chili garlic oil infused with green onions, soy sauce, and a touch of brown sugar, delivering a balanced spicy, savory, and slightly sweet taste in every bite.

Ingredients

Scale

Oils and Butter

  • 1/2 tablespoon sesame oil
  • 3 tablespoons neutral oil (vegetable, peanut, or canola)
  • 2 tablespoons unsalted butter

Aromatics and Spices

  • 3 green onions, white and green parts separated
  • 1 1/2 to 2 tablespoons garlic, finely minced
  • 1 tablespoon red pepper flakes (more to taste)
  • 1 to 2 teaspoons mild chili powder

Sauces and Seasoning

  • 3 tablespoons low sodium soy sauce
  • 1 teaspoon light brown sugar (more to taste)
  • Salt to taste

Other

  • 3 tablespoons parmesan, grated
  • 6 to 8 ounces knife-cut noodles

Instructions

  1. Boil Noodles: Bring a pot of water to a boil and cook the knife-cut noodles according to the package instructions until al dente. Drain and set aside.
  2. Prepare Sauce Mixture: In a bowl, combine the white parts of the green onions, finely minced garlic, red pepper flakes, mild chili powder, low sodium soy sauce, grated parmesan, light brown sugar, and salt to taste. Stir well and set aside.
  3. Heat Oils and Butter: In a saucepan over medium-high heat, add the sesame oil, neutral oil, and unsalted butter. Heat until the mixture is very hot and sizzling, but not smoking.
  4. Combine Hot Oil with Sauce: Remove the saucepan from heat and carefully pour the hot oil mixture over the bowl containing the garlic, green onions, chili flakes, and other ingredients. The mixture should bubble and sizzle upon contact. Stir thoroughly to combine all the flavors.
  5. Toss Noodles: Add the cooked noodles to the bowl and toss everything together until the noodles are evenly coated with the spicy chili garlic oil sauce.
  6. Finalize and Serve: Taste the noodles and adjust seasoning as needed. Add the green parts of the green onions, extra parmesan, and additional red pepper flakes if you prefer more spice. Serve warm and enjoy your flavorful spicy chili garlic oil noodles!

Notes

  • You can adjust the amount of red pepper flakes and chili powder to control the spice level according to your preference.
  • If you can’t find knife-cut noodles, other flat noodles or even spaghetti can be substituted.
  • Using low sodium soy sauce helps control the saltiness, but always taste and adjust seasoning as needed.
  • To make this dish vegan, substitute the butter and parmesan with vegan alternatives.
  • For a nuttier flavor, you can toast the sesame oil slightly before mixing with the other oils.
