TOMATO PUREE:
- 2 cups (350 grams) diced tomatoes (or a 14.5 ounce can diced tomatoes)
- 1 small onion, chopped (or 1/2 of a larger onion)
- 2 cloves garlic, chopped
SOUP BASE:
- 2 tablespoons vegetable oil
- 8 ounces (227 grams) Fideo (or Angel Hair broken into about 1-inch pieces)
- 6 cups (1.5 liters) chicken broth
- 1–2 teaspoons salt (adjust to taste)
- 1/2 teaspoon ground cumin
FOR SERVING:
- Fresh cilantro
- Queso Fresco
- Chopped avocado
- Corn tortillas
- Lime wedges
Instructions
- Tomato Puree: In a blender, blend the tomatoes, onion, and garlic until smooth.
- Soup Base: In a large pot over medium low heat, drizzle oil and cook fideo noodles until golden brown. Set aside.
- Cooking the Soup: Return the pot to medium heat. Add the pureed tomato mixture, chicken broth, salt, and cumin. Bring to a boil.
- Finishing: Stir in the toasted noodles, reduce heat, and simmer until tender, about 7-8 minutes.
- Serve: Garnish with cilantro, queso fresco, avocado, and serve with lime wedges and corn tortillas.
Notes
- Feel free to customize with additional toppings like diced jalapenos or a squeeze of fresh lime juice.
- This soup is best served fresh but can be stored in the refrigerator for up to 3 days.
