For the Chicken:

  • 2 pounds chicken breasts or thighs, cut into cubes
  • 1 tablespoon smoked paprika
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • kosher salt and black pepper
  • 1/4 cup all-purpose flour or use gluten-free
  • 4 tablespoons extra virgin olive oil

For the Zucchini:

  • 2 zucchini/yellow summer squash, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Hot Honey Sauce:

  • 1/2 cup hot sauce
  • 6 tablespoons salted butter
  • 46 cloves garlic, chopped
  • 3/4 teaspoon chipotle chili powder
  • 12 teaspoons cayenne pepper
  • 1/4 cup honey

For Serving:

  • Blue cheese or ranch dressing
  • Avocado, basil, sliced green onions

Instructions

  1. Preheat the oven: Preheat the oven to 450°F. Line a baking sheet with parchment paper or rub with oil.
  2. Prepare the Chicken and Zucchini: Toss together the chicken, paprika, onion powder, garlic powder, salt, pepper, and flour on the baking sheet. Drizzle with olive oil. Arrange chicken on one side and zucchini on the other. Bake for 15-20 minutes.
  3. Make the Hot Honey Sauce: In a saucepan, melt hot sauce, butter, garlic, chipotle chili powder, and cayenne. Stir in honey and season with salt.
  4. Coat the Chicken: Pour the sauce over the chicken on the baking sheet and bake for an additional 5 minutes.
  5. Serve: Serve the chicken and zucchini with hot honey sauce, avocado, basil, green onions, and blue cheese or ranch dressing.
