Ingredients
Scale
Meat
- 1 pound smoked sausage or kielbasa sausage, cut into ¾ inch chunks
- 12 ounce thick cut bacon
Cheese Mixture
- 4 ounce cream cheese, room temperature
- ¼ cup sour cream
- 1 jalapeno, stem and seeds removed, diced
- ½ cup sharp cheddar cheese
- ½ teaspoon Slap Ya Mama seasoning
Glaze
- ¼ cup BBQ sauce (any brand)
- ⅛ cup honey
- 1 ½ teaspoon brown sugar
Garnish
- Jalapeno slices
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pig shots evenly.
- Prepare Glaze: In a small bowl, combine the BBQ sauce, honey, and brown sugar. Mix until smooth and set aside to develop flavors.
- Wrap Sausage: Cut the bacon strips in half. Take each piece of smoked sausage and wrap it tightly with one strip of bacon.
- Arrange Wrapped Sausage: Place each bacon-wrapped sausage into a muffin pan or secure with a toothpick and arrange on a baking sheet. This ensures they hold shape while cooking.
- Make Cheese Topping: In a medium bowl, mix together the cream cheese, sour cream, diced jalapeno, sharp cheddar cheese, and Slap Ya Mama seasoning until fully combined and smooth.
- Fill Piping Bag: Transfer the cheese mixture into a quart-sized plastic baggie and clip one corner to create a makeshift piping bag.
- Top Sausage with Cheese: Pipe the cheese mixture generously onto the top of each bacon-wrapped sausage chunk.
- Add Jalapeno Garnish: Place a jalapeno slice on top of the cheese-topped sausages for extra flavor and presentation.
- Brush with Glaze: Using a brush, generously coat each pig shot with the prepared honey BBQ glaze to add sweetness and caramelization during baking.
- Bake: Bake in the preheated oven for 40-45 minutes, or until the bacon is crispy and the cheese topping is bubbly and lightly browned.
- Serve: Carefully remove from the oven, allow to cool slightly, then serve warm as an irresistible appetizer or party snack.
Notes
- You can use toothpicks instead of a muffin pan to secure the bacon-wrapped sausage pieces during baking.
- If you prefer less heat, reduce or omit the jalapeno in the cheese mixture and garnish.
- The Slap Ya Mama seasoning can be substituted with your favorite Cajun or Creole seasoning blend.
- For easier cleanup, line the baking sheet with aluminum foil before placing the pig shots on it.
- These pig shots can be made ahead and refrigerated; reheat in the oven to crisp the bacon before serving.
