Ingredients
Scale
Pie Dough
- 3 cups all-purpose flour
- 1 tsp salt
- ½ cup cold diced butter
- ¾ cup cold solid shortening
- 1 egg, beaten
- 5–6 tablespoons cold water
- 1 tablespoon white vinegar
Filling and Topping
- Blackberry preserves (or jam of your choice)
- Sugar (for sprinkling)
Instructions
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour and salt thoroughly.
- Cut in Fats: Using a pastry cutter or two knives, cut the cold diced butter and solid shortening into the flour mixture until pea-sized pieces remain.
- Add Wet Ingredients: Mix in the beaten egg, cold water, and white vinegar using a fork until the dough starts to come together. Add more water in small increments if needed to form a cohesive dough.
- Form Dough Balls: Turn the dough onto a floured surface and gather into a ball. Divide the dough ball in half. At this point, you can either wrap and chill the dough or proceed to the next step.
- Preheat Oven: Set your oven to 400°F (204°C) and line two baking sheets with parchment paper or silicone baking mats.
- Roll Dough: On a lightly floured surface, roll out one dough half into a large rectangle about 1/8 inch thick.
- Spread Jam: Evenly spread a thin layer of blackberry preserves or your preferred jam over the dough rectangle to avoid spillage when rolling.
- Roll and Slice: Starting from the long side, roll the dough tightly into a log. Turn the seam side down and carefully slice into ½ inch thick pieces.
- Prepare Tarts for Baking: Place the slices on the prepared baking sheet spaced apart. Sprinkle the tops generously with sugar. Repeat with the second dough half.
- Bake: Bake the tarts in the preheated oven for about 20 minutes or until they turn golden brown and crisp.
- Cool: Remove the baked tarts from the oven and let them cool on the baking sheets.
- Store: Keep the cooled tarts in a sealed container at room temperature, where they will stay fresh for several days.
Notes
- Ensure butter and shortening are very cold to achieve a flaky crust.
- If the dough feels dry, add water 1 teaspoon at a time to avoid overhydrating.
- Use a thin layer of jam to prevent the filling from leaking out during baking.
- Leftover tarts can be warmed slightly before serving for best flavor.
- Try different flavors of preserves to customize the tarts.
