Description

Indulge in the decadent combination of peanut butter and banana with this Peanut Butter Cup Banana Bread. Moist and flavorful, this bread is studded with mini peanut butter cups and topped with a sweet peanut butter glaze.

Dry Ingredients:

  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups mashed banana
  • 2 tablespoons sour cream
  • 1/2 teaspoon vanilla extract

Additional:

  • 1 (8-ounce) package mini peanut butter cups (about 1 1/2 cups)
  • 1/2 cup whipped peanut butter
  • 1/2 to 1 tablespoon granulated sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together flour, baking soda, and salt in a medium bowl.

  3. Using an electric mixer on medium-high speed, beat butter and both sugars until fluffy.
  4. Add eggs, one at a time, scraping down sides of bowl as necessary.

  5. Beat in banana, sour cream, and vanilla extract.
  6. With mixer on low, beat in flour and mini peanut butter cups.

  7. Pour into a greased 5X9-inch loaf pan. Bake for 50 to 60 minutes.
  8. Mix together peanut butter and sugar. Microwave until melted. Let cool slightly and place in a ziptop bag. Snip one of the corners and drizzle the glaze on top of the bread.
