For the Chicken:
- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup cornstarch
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 2 large eggs
- 1/4 cup vegetable oil (for frying)
For the Sauce:
- 1 tablespoon vegetable oil
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1/2 cup orange juice
- 1 teaspoon orange zest
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry mix)
For Garnish:
- Sliced green onions
- Sesame seeds
Instructions
- Prepare the Chicken: In a large bowl, combine cornstarch, flour, salt, and pepper. Beat the eggs in another bowl. Dip chicken pieces in eggs, then coat with the cornstarch-flour mixture.
- Fry the Chicken: Heat 1/4 cup vegetable oil in a skillet. Fry chicken until golden brown and cooked through. Drain on paper towels.
- Make the Sauce: In a pan, sauté ginger, garlic, and red pepper flakes. Add sugars, soy sauce, orange juice, zest, and vinegar. Simmer and thicken with cornstarch slurry.
- Combine Chicken and Sauce: Toss fried chicken in the sauce. Simmer to coat evenly.
- Serve: Garnish with green onions and sesame seeds before serving hot.
