Ingredients
Scale
Vegetables
- 2 pounds fresh green beans, trimmed and cut into 1-inch pieces
- 1 cup sliced mushrooms (fresh or canned)
Dairy and Creamy Ingredients
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/4 cup milk
Condiments and Seasonings
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 cup fried onions (plus extra for topping)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (if using fresh mushrooms)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare it for baking the casserole later.
- Blanch Green Beans: Boil a large pot of salted water and blanch the green beans for 4-5 minutes until they turn bright green and are tender-crisp. Drain and immediately submerge them in ice water to halt the cooking process. Drain again once cooled.
- Sauté Mushrooms: If using fresh mushrooms, heat olive oil in a skillet over medium heat and sauté sliced mushrooms for 5-7 minutes until tender and moisture evaporates. If using canned mushrooms, this step can be skipped.
- Mix Sauce: In a large mixing bowl, whisk together cream of mushroom soup, sour cream, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper until smooth.
- Combine Ingredients: Add the sautéed or canned mushrooms, blanched green beans, and 1/2 cup fried onions to the bowl. Stir until all ingredients are evenly coated with the sauce.
- Assemble Casserole: Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly. Sprinkle the shredded sharp cheddar cheese over the top.
- Bake: Bake in the preheated oven for 25-30 minutes until the casserole is bubbling and the cheese has melted.
- Add Topping: Remove from the oven and sprinkle additional fried onions on top. Return to the oven for another 5-10 minutes, or until the onions are golden brown and crispy.
- Rest and Serve: Let the casserole rest for 10 minutes to set slightly before serving for best texture and flavor.
Notes
- Use fresh green beans for the best texture and flavor.
- If canned mushrooms are used instead of fresh, skip the sautéing step.
- Make sure to blanch the green beans properly to retain their bright color and crispness.
- Additional fried onions on top add a crunchy texture contrast.
- This casserole can be prepared ahead and baked just before serving.
- Adjust salt and pepper according to your taste preference.
