Instructions
- Preparing the Dough: In a saucepan, melt 80 grams of butter over medium heat. Add 100 ml each of milk and water, along with ½ teaspoon of salt. Stir the mixture until the butter is fully melted and the liquids are combined.
- Mix the Dry Ingredients: In a separate bowl, whisk together 150 grams of flour and 1 teaspoon baking powder to ensure even distribution.
- Incorporate the Dry Mixture: Once the liquid mixture comes to a boil, reduce the heat and slowly add the flour mixture while stirring continuously to prevent lumps. Cook the dough until it pulls away from the pan sides and forms a smooth ball.
- Cool and Add Eggs: Transfer the dough to a mixing bowl and let it cool slightly so it’s warm but not hot. Add 4 eggs one at a time, mixing thoroughly after each to achieve a smooth, slightly sticky dough.
- Bake the Layers: Preheat oven to 400°F (200°C). Line a 25cm round pan with parchment paper. Divide dough into two equal parts, spread one portion evenly, and bake for 20 minutes on the medium rack. Repeat with the second portion. Let layers cool completely.
- Making the Cream Filling: In a bowl, beat 2 eggs and 150 grams sugar until pale and frothy. Gradually whisk in 100 grams flour, then slowly add 500 ml milk, stirring constantly for a smooth batter.
- Cook the Cream Mixture: Pour the batter into a saucepan and cook over medium heat, stirring continuously until thickened and boiling. Continue cooking for 3 minutes then remove from heat. Cover with plastic wrap to cool.
- Blend the Butter and Cream: Beat 180 grams butter until fluffy. Gradually incorporate cooled cream mixture in small portions, blending until smooth and creamy.
- Assembling the Cake: Place one cake layer in a clean pan, spread half the cream out evenly, then place the second cake layer on top. Spread the remaining cream over the top layer.
- Chill the Cake: Refrigerate the assembled cake for at least 2 hours to set the cream and meld the flavors.
- Garnish and Serve: Before serving, dust the cake with icing sugar or your preferred garnish. Slice and enjoy this delightful dessert.
