- Salt & pepper, to taste
For the Bake:
- 2 large zucchinis, sliced
- 1 cup cherry tomatoes, halved
- ½ cup black olives, sliced
- ½ cup sun-dried tomatoes, chopped
- ½ cup crumbled feta cheese
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C).
- Season Chicken: Rub the chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.
- Prepare the Bake: In a greased baking dish, place the seasoned chicken in the center and surround it with zucchini, cherry tomatoes, and olives.
- Bake: Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). Optionally, top with feta cheese during the final minutes of baking.
- Serve: Garnish with fresh parsley and serve hot.
