- 3 ounces sun-dried tomatoes

- 1 tablespoon gluten-free flour
- 1 cup almond milk (or any other milk)
- 1 tablespoon freshly chopped parsley (for garnish)
Instructions
- Coat the Chicken: In a medium bowl, mix 2 tablespoons gluten-free flour with salt and pepper. Coat each chicken breast piece with the seasoned flour.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken for 10-12 minutes per side until fully cooked. Set aside.
- Prepare the Sauce: Whisk 1 tablespoon flour with almond milk until smooth.
- Make the Skillet: In the skillet, sauté artichoke hearts, sun-dried tomatoes, and capers. Add milk mixture and lemon juice. Return chicken to the pan.
