- 1 1/2 cups Lucky Charms cereal
- 1/4 cup Lucky Charms marshmallows (optional)
Instructions
- Prepare the Baking Dish: Line a 9×9 or 9×13-inch baking dish with parchment paper and set aside. This prevents sticking and makes for easy removal of the treats.
- Melt the Butter: Place a large pot or saucepan over medium-low heat and melt the unsalted butter until fully liquefied.
- Melt Marshmallows: Add 5 1/2 cups of mini marshmallows (one entire 10oz bag) into the melted butter. Stir continuously over medium-low heat until the marshmallows have just melted and the mixture is smooth. Remove from heat promptly to avoid burning.
- Add Vanilla: Stir in 1 teaspoon of vanilla extract thoroughly to infuse flavor into the melted marshmallow mixture.
- Combine Cereals and Remaining Marshmallows: Add 5 cups of rice cereal, 1 1/2 cups of Lucky Charms cereal, and the remaining 1 1/2 cups of mini marshmallows (about 1/3 of a 10oz bag) to the pot. Mix well until all ingredients are evenly coated with the marshmallow mixture.
- Shape the Treats: Transfer the mixture into the prepared baking dish and press gently but firmly into an even layer using a spatula or your hands. To prevent sticking, wet your hands or spatula with warm water beforehand.
- Add Extra Marshmallows (Optional): Press the optional 1/4 cup of Lucky Charms marshmallows into the top of the bars for extra color and flavor.
- Set the Treats: Allow the treats to cool and set either at room temperature or in the refrigerator before cutting into bars and serving.
