  • 1 medium onion, thinly sliced

5 boneless, skinless chicken thighs

  • ⅓ cup lower carb BBQ sauce
  • ½ cup shredded cheese

Instructions

  1. Heat oil in a medium skillet. Add onions and cook for 3-4 minutes, stirring occasionally.
  2. Salt and pepper the chicken thighs, then place them in the skillet with the onions. Cover and cook on medium/low heat for 2-3 minutes. Uncover and continue cooking until the chicken reaches an internal temperature of 165 degrees F, about 10 minutes.
  3. Using 2 forks, shred the chicken, then stir in the BBQ sauce. Top with cheese and cover for 1-2 minutes to melt the cheese.
