  • 2 cups shredded fresh gruyere (at room temperature)
  • 1 ½ cups shredded fresh white cheddar (at room temperature)

  • ½ teaspoon freshly ground black pepper (more or less to taste)
  • ¼ teaspoon dried nutmeg
  • 1 pound cooked lobster meat (chopped)
  • 2 tablespoons unsalted butter
  • ½ cup breadcrumbs
  • ¼ cup grated fresh parmesan (at room temperature)

Instructions

  1. Preheat Oven: Preheat oven to 400°F. Grease a baking dish and set aside.
  2. For the Pasta: Cook pasta until just shy of al dente. Drain and set aside.
  3. For the Lobster Sauce: Make a cheese sauce with butter, flour, milk, gruyere, cheddar, salt, pepper, nutmeg. Add lobster and pasta.
  4. Assemble: Transfer mixture to baking dish.
  5. Prepare Topping: Mix melted butter, breadcrumbs, and parmesan. Sprinkle over mac and cheese.
  6. Bake: Bake for 25-30 minutes until bubbly and golden brown.
  7. Serve: Let it cool slightly before serving.
