- 2 cups shredded fresh gruyere (at room temperature)
- 1 ½ cups shredded fresh white cheddar (at room temperature)

- ½ teaspoon freshly ground black pepper (more or less to taste)
- ¼ teaspoon dried nutmeg
- 1 pound cooked lobster meat (chopped)
- 2 tablespoons unsalted butter
- ½ cup breadcrumbs
- ¼ cup grated fresh parmesan (at room temperature)
Instructions
- Preheat Oven: Preheat oven to 400°F. Grease a baking dish and set aside.
- For the Pasta: Cook pasta until just shy of al dente. Drain and set aside.
- For the Lobster Sauce: Make a cheese sauce with butter, flour, milk, gruyere, cheddar, salt, pepper, nutmeg. Add lobster and pasta.
- Assemble: Transfer mixture to baking dish.
- Prepare Topping: Mix melted butter, breadcrumbs, and parmesan. Sprinkle over mac and cheese.
- Bake: Bake for 25-30 minutes until bubbly and golden brown.
