Description

A refreshing and light Lime Fluff dessert that is perfect for a Weight Watchers diet. This fluffy treat combines the tangy flavor of lime with creamy yogurt, creating a guilt-free indulgence.

For the Lime Fluff:

  • 1 tub (450g or 2 cups) fat-free plain yogurt or fat-free Greek yogurt
  • 1 sachet sugar-free lime jelly or jello crystals/powder
  • Juice of 1/2 lime (optional)
  • 1/2 cup boiling water (1/4 pint)
  • 1/2 cup cold water (1/4 pint)

Instructions

  1. Dissolve the Jelly: Pour the jelly crystals into a jug, add boiling water, stir until dissolved, then mix in cold water and set aside.
  2. Prepare the Yogurt: In a mixing bowl, combine yogurt with lime juice, whisk until bubbles form.
  3. Combine Mixtures: Slowly pour the jelly mixture into the yogurt while whisking continuously.
  4. Whisk: Whisk the mixture for 5-10 minutes until light and fluffy.
  5. Chill: Spoon the mixture into ramekins, refrigerate for at least 2 hours.

Notes

  • Adjust sweetness to taste, depending on the brand of jelly used.
  • For a stronger lime flavor, add more lime juice.
