For the Lime Fluff:
- 1 tub (450g or 2 cups) fat-free plain yogurt or fat-free Greek yogurt
- 1 sachet sugar-free lime jelly or jello crystals/powder
- Juice of 1/2 lime (optional)
- 1/2 cup boiling water (1/4 pint)
- 1/2 cup cold water (1/4 pint)
Instructions
- Dissolve the Jelly: Pour the jelly crystals into a jug, add boiling water, stir until dissolved, then mix in cold water and set aside.
- Prepare the Yogurt: In a mixing bowl, combine yogurt with lime juice, whisk until bubbles form.
- Combine Mixtures: Slowly pour the jelly mixture into the yogurt while whisking continuously.
- Whisk: Whisk the mixture for 5-10 minutes until light and fluffy.
- Chill: Spoon the mixture into ramekins, refrigerate for at least 2 hours.
Notes
- If following the WW Green plan, adjust yogurt as needed.
- Adjust sweetness to taste, depending on the brand of jelly used.
- For a stronger lime flavor, add more lime juice.
