This Lemon Zucchini Bread is a delightful twist on classic zucchini bread, with a bright lemon flavor and a sweet glaze topping. Perfect for breakfast or as a sweet treat with tea or coffee.

Wet Ingredients:
- 1 cup canola or vegetable oil
- 6 oz Greek Yogurt, lemon or vanilla
- 1 Tbsp lemon juice
- 3 eggs
- 2 cups sugar
Dry Ingredients:
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp lemon zest
- 1 tsp salt
Additional:
- 2 cups grated zucchini, about 1 large zucchini
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 1–2 Tbsp lemon
- 2 Tbsp lemon zest
Instructions
- Preheat oven and prepare pans: Preheat oven to 350 degrees F and grease two 8 1/2″ x 4 1/2″ bread pans with baking spray.
- Mix wet ingredients: In a large bowl, cream together oil, Greek yogurt, lemon juice, and sugar. Add eggs one at a time, beating well after each addition.
- Combine dry ingredients: In another bowl, sift together flour, baking powder, baking soda, and salt. Stir in lemon zest.
- Combine wet and dry ingredients: Add dry mixture to the wet mixture, stirring until just combined.
- Add zucchini and vanilla: Mix in grated zucchini and vanilla extract.
- Bake: Divide batter between the two pans and bake for 55-60 minutes or until a tester comes out clean.
- Cool and glaze: Let the bread cool in the pans for 10-20 minutes, then transfer to a rack. Mix powdered sugar and lemon juice for glaze and pour over the bread.
- Top with zest: Sprinkle lemon zest over the glaze before serving.
