Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix Ingredients: In a mixing bowl, combine shredded cheddar, shredded low-moisture mozzarella, garlic powder, onion powder, paprika, black pepper, salt, almond flour, and the large egg. Stir together until a dough forms. If the mixture is too wet, add 1 teaspoon of almond flour; if too dry, add a small splash of cream or some extra egg white to adjust the consistency.
  3. Shape Dough: Wet your hands to prevent sticking, then roll the dough into 12 equal-sized balls, approximately 1 inch each. Place the balls spaced at least 1 inch apart on the prepared baking sheet to allow even baking.
  4. Bake: Bake the cheese puffs in the preheated oven for 10 to 12 minutes, or until they turn golden brown on the outside.
  5. Cool: Remove from the oven and let the puffs cool on the tray for about 5 minutes. They will firm up as they cool, making them easier to handle and enhancing the texture.
