Instructions

  1. Soak potatoes: Cut the russet potatoes into sticks and soak them in cold water for at least 30 minutes to remove excess starch. After soaking, drain the water and pat the potato sticks dry thoroughly with paper towels.
  2. Prepare cheese filling: Cut the shredded cheese into small pieces suitable to be inserted inside the potato sticks, ensuring each piece will melt nicely inside while frying.
  3. Set up coating stations: Prepare three shallow bowls: one with all-purpose flour mixed with salt and ground black pepper, the second with beaten eggs, and the third with panko breadcrumbs for a crispy outer layer.
  4. Coat the sticks: Carefully insert the cheese pieces into the center of each potato stick. Then, evenly coat each stuffed stick first in the flour mixture, dip into the beaten eggs, and finally roll in the breadcrumbs to completely cover the surface.
  5. Heat oil and fry: Pour enough oil into a deep skillet or frying pan and heat it over medium-high heat. Once hot, fry the coated potato sticks in batches, cooking for about 4 to 5 minutes per batch or until they turn golden brown and crispy. Use tongs to turn sticks as necessary to ensure even frying.
