Instructions

  1. Combine Ingredients: In a medium bowl, gently mix together the ground turkey, oats, grated zucchini, minced onion, 1/4 cup ketchup, beaten egg, kosher salt, and black pepper until just combined. Avoid overmixing to keep the meatloaf tender.
  2. Form Mini Loaves: Divide the mixture evenly into 4 portions and shape each one into a mini loaf to ensure even cooking.
  3. Preheat Air Fryer: Preheat your air fryer to 350°F (175°C) to prepare for cooking the meatloaves.
  4. Air Fry Meatloaves: Place the mini loaves in the air fryer basket. Cook for 15 minutes. Halfway through cooking, gently flip each mini loaf, brush the top with the remaining ketchup, and continue cooking for an additional 5 minutes for a nicely glazed finish.
