Instructions

  1. Prepare and Chill the Cookie Dough: Make the vanilla sugar cookie dough according to your recipe directions. Once prepared, wrap the dough tightly in plastic wrap and refrigerate for 20 minutes to firm up, helping it hold its shape during molding.
  2. Portion and Shape the Cookie Dough: Divide the chilled dough into 24 equal portions, about 35 grams each. Roll each portion into a smooth ball. Prepare a wooden cookie mold by brushing inside with flour and tapping out excess. Lightly coat each dough ball with flour, press into the mold flattening the bottom, then tap mold firmly on the counter to release the shaped cookie. Place shaped cookies on two parchment-lined baking sheets, spaced 2 inches apart.
  3. Chill the Shaped Cookies: Transfer the baking sheets with shaped cookies to the refrigerator and chill for 30 minutes. This chilling step helps maintain the cookie shape during baking.
  4. Bake the Cookies: Preheat oven to 350°F (175°C), place a rack in the center. Bake one sheet at a time for 12 minutes or until just set. If centers puff up, gently flatten them with the back of a teaspoon. Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. Allow full cooling before filling for best texture.
