Ingredients

Scale

Sweet Potatoes

  • 2 large sweet potatoes (about 1.5 pounds / 680g), peeled if desired and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • Pinch of salt

Beef Mixture

  • 1 pound (450g) ground beef (80/20 recommended)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon chili flakes (adjust to taste)
  • Salt and black pepper, to taste

Hot Honey Sauce

  • ¼ cup (85g) honey
  • 12 tablespoons hot sauce (smoky chipotle recommended)
  • 1 teaspoon lemon juice, freshly squeezed

Optional Toppings

  • Fresh cilantro or parsley
  • Toasted pumpkin seeds
  • Crumbled feta or cotija cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Sweet Potatoes: Peel the sweet potatoes if desired and cut into roughly 1-inch cubes. Toss them in a large bowl with 1 tablespoon of olive oil and a pinch of salt. Spread the cubes evenly in a single layer on the prepared baking sheet.
  3. Roast Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 25 minutes, flipping them halfway through to ensure even browning. For extra crispiness, roast for an additional 5 minutes, but watch carefully to avoid burning.
  4. Sauté Garlic: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  5. Cook Ground Beef: Add the ground beef to the skillet, breaking it up with a spatula. Season with smoked paprika, ground cumin, chili flakes, salt, and black pepper. Cook, stirring often, until the beef is browned and cooked through, about 7-8 minutes. Adjust seasoning to taste.
  6. Make Hot Honey Sauce: In a small bowl or jar, whisk together honey, hot sauce, and freshly squeezed lemon juice until smooth. Adjust the amount of hot sauce and lemon juice to your preferred heat and acidity.
  7. Assemble Bowls: Divide the roasted sweet potatoes among serving bowls. Top with the spiced ground beef and drizzle generously with the hot honey sauce.
  8. Garnish and Serve: Garnish each bowl with fresh cilantro or parsley, toasted pumpkin seeds, or crumbled feta or cotija cheese if desired. Serve immediately to enjoy the warm, vibrant flavors.

Notes

  • Adjust chili flakes and hot sauce quantities to control the heat level of the dish.
  • Peeling the sweet potatoes is optional; leaving the skin on adds texture and nutrients.
  • For a vegetarian version, substitute ground beef with cooked lentils or a plant-based ground meat alternative.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet or microwave before serving to retain moisture and flavor.
