Ingredients
Scale
Sheet Pan Dinner
- 14 ounces smoked sausage (like kielbasa or andouille), sliced into ½-inch rounds (ensure it’s pre-cooked)
- 2 large sweet potatoes, peeled and chopped into 1-inch cubes
- 1 large head broccoli, cut into bite-sized florets
- 1 tablespoon olive oil
- Salt and pepper, to taste
Honey Garlic Sauce
- ¼ cup honey
- ¼ cup low-sodium soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry for thickening)
Instructions
- Preheat and Prep: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Prepare the Vegetables: In a large bowl, toss sweet potato cubes with olive oil, salt, and pepper. Spread evenly on the prepared baking sheet.
- First Roast: Roast sweet potatoes for 15 minutes to begin cooking them.
- Make the Sauce: Meanwhile, in a small saucepan, combine honey, soy sauce, minced garlic, and apple cider vinegar. Bring to a simmer over medium heat. Whisk in cornstarch slurry and cook for 1-2 minutes until slightly thickened. Remove from heat.
- Combine Ingredients: Remove the baking sheet from oven after 15 minutes. Add sliced sausage and broccoli florets to the pan. Drizzle half the honey garlic sauce over and toss gently to coat.
- Second Roast: Return the pan to the oven and roast for another 15-20 minutes until sweet potatoes are fork-tender and broccoli crisp-tender.
- Final Glaze: Remove from oven, drizzle remaining sauce over everything, toss to coat, and serve immediately.
Notes
- Don’t crowd the pan; use a large or two smaller sheet pans to allow roasting instead of steaming for proper caramelization.
- Cut sweet potatoes into uniform 1-inch cubes to ensure even cooking and tenderness.
- If sauce is too thick, thin with a tablespoon of water to reach pourable but thick consistency.
- Check doneness by piercing sweet potatoes with a fork; broccoli should be bright green and tender-crisp.
