Ingredients
Scale
Meat and Vegetables
- 1 pound ground beef
- 4 medium potatoes, sliced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
Other Ingredients
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Brown Beef and Onion: In a skillet over medium heat, cook the ground beef along with the chopped onion until the beef is browned and the onions are softened, about 5-7 minutes. Drain excess fat if needed.
- Layer Potatoes: Arrange the sliced potatoes evenly in the bottom of a baking dish, creating the first layer of the casserole.
- Add Beef Mixture: Spread the browned ground beef and onion mixture evenly over the layer of potatoes.
- Layer Vegetables: Sprinkle the mixed vegetables (carrots, peas, and corn) evenly on top of the beef layer.
- Add Mushroom Soup: Pour the cream of mushroom soup evenly over the entire dish, covering the layers to add creaminess and moisture.
- Top with Cheese and Season: Sprinkle the shredded cheese evenly over the top, then season with salt and pepper to taste.
- Bake Casserole: Place the baking dish in the preheated oven and bake for 1 hour or until the potatoes are tender and the cheese is melted and bubbly. Let it cool slightly before serving.
Notes
- You can substitute cream of mushroom soup with cream of chicken or celery soup if preferred.
- For a vegetarian version, replace ground beef with cooked lentils or a meat substitute and use a vegetarian mushroom soup.
- Make sure to slice potatoes uniformly for even cooking.
- If you want a crispy top, you can broil the casserole for 2-3 minutes after baking, watching closely to prevent burning.
- This casserole can be assembled ahead of time and refrigerated before baking to save time on busy days.
