- Mix peanut butter and honey: In a large mixing bowl, stir together the peanut butter and honey until fully combined and smooth.
- Add almond flour: Pour almond flour into the peanut butter mixture and stir until the mixture resembles a soft cookie dough. Adjust by adding more almond flour if too runny or more peanut butter if too crumbly; the dough should hold together easily.
- Form pretzel sandwiches: Scoop about 1 teaspoon of the peanut butter mixture and place it on one pretzel. Top with a second pretzel to create a sandwich. Remove any excess mixture around the edges and return it to the bowl.
- Arrange on baking sheet: Place all pretzel sandwiches on the parchment-lined baking sheet in a single layer.
- Melt chocolate: Place the dark chocolate chips in a small bowl or ramekin and microwave in 30-second increments, stirring well between each session until smooth and fully melted. This should take around 2 minutes.
- Dip pretzel bites: Dip one half of each pretzel bite into the melted chocolate and return it to the baking sheet. Repeat until all bites are coated.
- Chill and set: Transfer the baking sheet to the fridge and let the chocolate harden for about one hour before serving or storing.
