For the Marshmallows:
- 1 cup water, divided
- 3 tbsp gelatin
- 1 cup honey
- 1 tbsp vanilla extract
Optional for Coating:
- 1 tbsp arrowroot powder
Instructions
- Bloom Gelatin: Add 1/2 cup water to a large bowl or the bowl of a stand mixer. Sprinkle the gelatin evenly overtop and allow to bloom.
- Heat Honey Mixture: Add remaining water and honey to a saucepan. Bring to a boil, then simmer for 5 minutes.
- Mix Gelatin and Honey: Start mixing the bloomed gelatin on low speed. Gradually pour in the honey mixture. Add vanilla extract.
- Beat Mixture: Increase mixer speed to high. Beat for 8-10 minutes until thick, glossy marshmallow fluff forms.
- Set Marshmallows: Quickly pour the fluff into a parchment-lined dish. Let it set overnight before cutting into squares.
- Coat (Optional): Toss marshmallows in arrowroot powder to prevent sticking.
Notes
- Store marshmallows at room temperature.
- If using for roasting, let them dry for a couple of days.
