  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro leaves (optional)

  • 3/4 cup shredded cheddar cheese

Instructions

  1. Preheat the oven: Set your oven to 450°F (230°C) to get it ready for baking the dip with melted cheese on top.
  2. Blend the dip ingredients: In a food processor or blender, combine olive oil, black beans, Greek yogurt, salt, cumin, chili powder, lime juice, cilantro, and optional water. Blend until smooth but not watery, adjusting with water if necessary for a creamy consistency.
  3. Prepare the baking dish: Pour the blended bean dip evenly into an 8.5 x 6.5 inch or 8×8 inch baking dish, smoothing the top.
  4. Add cheese and bake: Sprinkle the shredded cheddar cheese evenly over the top of the dip. Bake in the preheated oven for 15 minutes until the cheese is bubbling and melted.
  5. Optional broil for finishing touch: For a golden and extra melty cheese top, broil the dip for 1-2 minutes, watching carefully to avoid burning.
