Ingredients:

  • 4 large ripe bananas (smashed)
  • 3 cups oats
  • 1 tsp vanilla extract
  • mix-ins of your choice (optional)

Instructions

  1. Preheat oven to 350°F and grease a mini muffin pan. Generously grease the pan to prevent sticking.
  2. In a large bowl, mix together bananas, oats, and vanilla. Ensure the mixture is well combined.
  3. Add mix-ins of your choice. Fold them into the batter gently.
  4. Spoon mixture into muffin pan. Fill each cup almost to the top.
