For the Chicken:
- 4 medium chicken breasts (skinless and boneless)
- 1 tbsp garlic powder
- 2 tsp paprika
- 1 tbsp Italian seasoning
- Salt and black pepper (to taste)
For the Toppings:
- 1 cup pizza sauce
- 1 cup mozzarella cheese (shredded)
- ½ cup ham (chopped)
- ½ cup pineapple (diced)
- 4 cups steamed broccoli (cut into halves)
- Pineapple (diced) for topping
- Grated Parmesan for topping
Instructions
- Preheat the oven: Preheat the oven to 400F. Prepare a 9×13 casserole dish and spray it with oil.
- Cut and season chicken: Cut chicken breasts into 1-inch cubes. Add them to the baking dish. Cover with garlic powder, paprika, Italian seasoning, salt, and black pepper. Toss well to combine.
- Bake the chicken: Bake in the oven for 15 minutes, then take the dish out.
- Add toppings: Cover the chicken cubes evenly throughout the dish with pizza sauce, mozzarella cheese, chopped ham, and diced pineapple.
- Finish baking: Return to the oven and bake for another 10-12 minutes until the cheese melts and starts to brown and bubble.
- Assemble bowls: Divide the cooked chicken into 4 meal prep bowls, add steamed broccoli, top with diced pineapple, and grated Parmesan.
