Chicken:

- 4 skinless, boneless chicken breasts
- 2 teaspoons Creole-style seasoning
Guacamole:
- 2 avocados, peeled and pitted
- 1 small tomato, diced
- 2 tablespoons finely chopped red onion
- 1 tablespoon fresh lime juice
- Garlic powder to taste
- Salt and ground black pepper to taste
Additional:
- 4 slices pepper Jack cheese
Instructions
- Prep the Chicken: Preheat the oven’s broiler. Cook chicken breasts in oil and butter with Creole seasoning until cooked through and browned, about 10 minutes per side.
- Make the Guacamole: In a bowl, mash avocados with tomato, onion, lime juice, garlic powder, salt, and pepper.
- Assemble: Spread guacamole on each chicken breast, top with cheese slices.
- Broil: Broil until cheese is melted and bubbly, for 2 to 4 minutes.
