Peppers:
- 3 peppers (assorted colors, seeds and stalks removed)
Filling:
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 14 oz ground turkey (7% fat)
- 2 garlic cloves, minced
- 1 cup cauliflower rice
- 1 cup mushrooms, chopped
- 3 tbsp tomato puree
- 1 tbsp dried Italian herbs
- 1/2 tsp salt (or more to taste)
- 1/2 tsp pepper
- 1 1/4 cup grated cheddar
- 2 tbsp fresh parsley, finely chopped
Instructions
- Pre-roast Peppers: Heat the oven to 190C electric or 375F. Halve the peppers lengthways, remove seeds and core, rub with olive oil, season, and roast for 15 minutes.
- Make The Filling: In a pan, sauté onion and garlic. Add ground turkey, cook until no longer pink. Add cauliflower rice, mushrooms, tomato puree, herbs, salt, and pepper. Cook until golden, then stir in cheese and parsley.
- Assemble And Bake: Fill roasted peppers with turkey mixture, top with cheese, and bake for 10-15 minutes until cheese melts and browns.
