Ground Turkey:

  • 1 pound ground turkey

Zucchinis:

  • 2 medium zucchinis

Other:

  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil: In a large skillet over medium heat.
  2. Sauté onion: Peel and finely chop the onion, then add to the skillet and sauté until soft, about 3-4 minutes.
  3. Cook garlic: Peel and mince the garlic cloves, add to the skillet, and cook for 30 seconds.
  4. Cook turkey: Crumble the ground turkey into the skillet and cook for 6-8 minutes until browned.
  5. Prepare zucchini: Wash, trim, and slice the zucchinis into half-moons.
  6. Add zucchini: Add zucchini to the skillet with the turkey mixture and cook for 4-5 minutes.
  7. Season: Sprinkle oregano, salt, pepper, and red pepper flakes over the mixture.
  8. Add broth: Pour chicken broth into the skillet and simmer for 3-4 minutes.
  9. Add cheese: Sprinkle Parmesan cheese over the skillet and stir until melted.
  10. Adjust seasoning: Taste and adjust seasoning as needed.
  11. Serve: Garnish with extra Parmesan and serve immediately.
