  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 dark chocolate bar

Instructions

  1. Prepare the crust: Add Oreo cookies to a blender or food processor and pulse until fine crumbs form. Transfer crumbs to a large bowl, add melted butter, and mix until evenly combined.
  2. Form crust: Press the cookie crumb mixture firmly into the bottom and sides of a 9- or 10-inch pie pan, leaving about 1 inch from the top. Use the bottom of a measuring cup to compact the crust evenly. Chill the crust in the refrigerator until ready to fill.
  3. Make the filling: Disregard pudding box instructions. In a large bowl, combine pudding mix with 3 cups of heavy whipping cream and beat with an electric mixer until very thick and creamy.
  4. Add Cool Whip and flavoring: Fold in the thawed Cool Whip until well combined. Add mint extract and a few drops of green gel food coloring, mixing on low speed until color is evenly distributed. Add additional drops for desired green hue.
  5. Fill the pie: Spread the mint pudding filling evenly over the chilled Oreo crust. Cover the pie with plastic wrap and refrigerate for 4 to 8 hours to set.
  6. Prepare the topping: Place a mixing bowl in the freezer for 15 to 20 minutes to chill. Remove and add cold 1 cup heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer for 4-5 minutes or until stiff peaks form.
  7. Create chocolate shavings: Warm the dark chocolate bar in the microwave for 5-7 seconds to soften slightly. Use a vegetable peeler along the edge to create chocolate curls or shavings.
  8. Assemble toppings: Spoon the whipped cream evenly over the set pie. Garnish with chocolate shavings and fresh mint leaves for a decorative and flavorful finish. Serve chilled.
