Dough:

  • 1½ cups light brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 (10 ounce) bag peanut butter chips
  • 1 cup peanuts (I used cocktail)

Topping:

  • ½ cup granulated sugar for the topping

Instructions

  1. Prep Cookie Sheets: Line 2 cookie sheets with parchment paper and set aside.
  2. Mix Wet Ingredients: Add butter, brown sugar, granulated sugar, peanut butter, eggs, and vanilla to a large mixing bowl. Mix until light and fluffy.
  3. Combine Dry Ingredients: Whisk together flour, salt, and baking powder in a separate bowl. Add to wet ingredients and blend until combined.
  4. Add Mix-Ins: Stir in peanut butter chips and peanuts.
  5. Form Dough: Divide dough into 14 balls, roll in sugar, and place on cookie sheets. Press each cookie with a fork and sprinkle more sugar on top. Refrigerate for 1 hour.
  6. Bake: Preheat oven to 350°F. Bake cookies for 16-18 minutes. Cool on the counter before removing.
