Potatoes:
- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon Gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
Steak:
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
Instructions
- Prep: Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Cook the potatoes: Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook until golden brown and tender, about 8-10 minutes. Remove from pan.
- Sear the steak: Increase heat, add remaining ghee. Add steak, season with salt and pepper. Sear until golden brown, about 3-4 minutes.
- Combine: Return potatoes to pan, stir to combine. Adjust seasoning. Top with parsley and serve.
