Potatoes:

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste

Steak:

  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Prep: Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  2. Cook the potatoes: Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook until golden brown and tender, about 8-10 minutes. Remove from pan.
  3. Sear the steak: Increase heat, add remaining ghee. Add steak, season with salt and pepper. Sear until golden brown, about 3-4 minutes.
  4. Combine: Return potatoes to pan, stir to combine. Adjust seasoning. Top with parsley and serve.
