- 2/3 cup Low Sodium Beef Broth
- 2 tbsp Balsamic Vinegar
Chicken:
- 4 Chicken Breasts (boneless skinless)

Cheeses:
- 1 cup Mozzarella Cheese (shredded)
- 1/2 cup Parmesan Cheese (shredded)
Instructions
- Preheat the Oven: Preheat the oven to 400 degrees and spray a 9×13 inch baking dish with cooking spray.
- Saute Onions: In a large skillet over medium-high heat, melt butter and cook sliced onions for 5 minutes.
- Add Seasonings: Reduce heat to medium, add garlic, pepper, and thyme to the onions, and cook for an additional minute.
- Cook Onion Mixture: Stir in beef broth and balsamic vinegar, simmer until onions are jam-like, about 10 minutes.
- Layer Ingredients: Spread 1/3 of the onion mixture in the baking dish, place chicken on top, sprinkle with salt, then add remaining onions and cheeses.
- Bake: Bake for 30 minutes or until chicken reaches an internal temperature of 165 degrees.
