For the Garlic & Scallion Sauce

  • 3 tablespoons light soy sauce
  • ½ teaspoon sugar
  • 1 scallion, finely chopped

Instructions

  1. Prepare the Enoki Mushrooms: Be gentle when handling the enoki mushrooms. Trim away about 1 inch of the root section. Then, use your fingers to tear the mushrooms into small, bite-size bundles. Arrange them neatly in a colander or plate, rinse under cold water to clean, and drain thoroughly.
  2. Blanch the Mushrooms: Bring a wok or pot of water to a rolling boil. Working in two batches, blanch each batch of enoki mushrooms for about 1 minute until just tender. Drain immediately and transfer the mushrooms onto your serving plate to retain their shape and texture.
  3. Make the Garlic & Scallion Sauce: Heat 2 tablespoons of oil in a small saucepan over medium heat. Add the minced garlic and cook for about 10 seconds – just until fragrant but not browned to keep a fresh flavor. Then add the light soy sauce, sugar, and chopped scallions. Bring the mixture to a gentle boil, then turn off the heat promptly to preserve the fresh and sweet taste of the garlic and scallions.
  4. Assemble and Serve: Slowly pour the hot garlic and scallion sauce evenly over the blanched enoki mushrooms. Serve immediately to enjoy the contrasting textures and bright flavors at their best.
