- Blanch the Mushrooms: Bring a wok or pot of water to a rolling boil. Working in two batches, blanch each batch of enoki mushrooms for about 1 minute until just tender. Drain immediately and transfer the mushrooms onto your serving plate to retain their shape and texture.
- Make the Garlic & Scallion Sauce: Heat 2 tablespoons of oil in a small saucepan over medium heat. Add the minced garlic and cook for about 10 seconds – just until fragrant but not browned to keep a fresh flavor. Then add the light soy sauce, sugar, and chopped scallions.
