Tomato Jam:
- 2 pounds very good ripe tomatoes, cored and coarsely chopped (I used roma tomatoes)
- 3/4 cup light brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon fresh grated or minced ginger
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1 teaspoon salt
- 1/2 teaspoon cayenne
Instructions
- Add all the ingredients: Place all the ingredients in a heavy-bottomed saucepan. Bring the mixture to a boil, stirring frequently to prevent burning.
- Simmer: Reduce the heat and simmer the mixture, stirring occasionally, until it thickens to jam consistency.
- Cool and store: Remove from heat, allow the jam to cool to room temperature. Transfer to an airtight container and refrigerate for up to 10 days.
